High Quality Salmon Sashimi: The Difference

With years of experience in the business, we know the quality of salmon is highly dependent on the size of the fish. Quality Salmon Sashimi has a thick and evenly distributed oil line.

The larger the salmon, the higher the fat content.

The color and luster are also better when the fish is bigger because there is a sufficient amount of oil, giving it the shiny, vibrant, and moist texture and appearance salmon is known for.

When the oil content is high, the taste is elastic and elegant.

Low quality salmon will be dark in color without the obvious grease lines. Often times, these cuts are lacking in flavor due to the fact they were frozen. The texture will be similar to eating rubber and has no vitality.

Once you taste the quality salmon, it is very easy to tell if a cut of salmon is low or high quality.

Myth of Sashimi and Sushi Grades

The term sashimi grade or sushi grade means nothing in this commercialized phrase.

Retailers will use these terms to mark up pieces of salmon, but in reality, there is no value or grading for sashimi and sushi salmon.

Freshness of salmon directly affects flavor.

Industry regulations have high requirements for what can be used in salmon sashimi, and it is only fresh salmon. Frozen salmon cannot be used to make sashimi.

Prepackaged Salmon Sashimi is often made from frozen salmon and not overseen by a chef.

There is no quality assurance. Nothing can compare to the senses of an experienced, professional chef, who should process every cut that goes into Salmon Sashimi.

If you’re unsure about the quality, simply ask the seller if it has ever been frozen.

Salmon supply is stable. There is no need to buy frozen salmon because fresh is always available.

Salmon v. Trout

The common assumption and misconception is that an dark orange coloring means the fish is trout and not salmon. Trout cannot be eaten raw in sashimi like salmon, but this idea may not be true.

There are many varieties of salmon in as many colors. The best way to tell the difference between salmon and trout is by the white oil line.

Salmon has an obvious oil line, while trout has almost no oil line at all.

The other possibility is the piece is salmon, but the cut has been taken from a section near the tail, where the fat content is much lower, resulting in a look similar to trout.

Our cuts of fresh, premium salmon only come from the mid-loin, an ideal section for Salmon Sashimi. These cuts have a buttery taste and slick mouthfeel that is a delight to experience.

How many slices will I get?

Every 200G of Fresh Salmon Sashimi will contain 10-11 pieces of Standard Sashimi Cut. Please note that the number of cuts may vary depending on the actual situation. But the net weight is guaranteed to exceed.
