Taste of Hamachi Sashimi

For those new to sashimi, Hamachi does not have a fishy taste like salmon or other fish. It has an elegant and subtle flavor, making it remarkable and memorable. With a high oil content spread evenly throughout, you’re guaranteed to enjoy its smooth texture with each bite.

The meat flows over the tip of the tongue like silk, releasing a slight fruity and sweet aftertaste. The flavor is clean, mild, and luscious.

Hamachi v. Buri

Hamachi and buri are the same fish but go by different names depending on the Japanese regional criteria. Both come from yellowtail.

The names diverge depending on the fish’s growth stage. In Kanto, a yellowtail over 60 centimeters will always be called buri. But in Kansai and other western regions, buri refers to yellowtails over 80 centimeters.

Each region in Japan has carefully set guidelines for the different stages of wild-caught yellowtail. In principle, it is the same. November to December is deep sea cold season when yellowtail accumulates thick fat and taut muscles along its entire body.

The perfect time to catch one is right before they have laid their eggs and are at the height of their fat content. Hamachi and buri are the same fish caught at different times of the year. Buri is far more rare because it can only be found during a very short season.

Including buri in our selection is impossible and we cannot offer it to you based on traditional requirements. However, we provide only the highest quality Hamachi / Buri caught under the best circumstances.

Reddish Part of Hamachi

Hamachi can be found with the reddish portion intact and cut away. This red portion goes by a name: 血合い.

Not only is it edible, it provides the most unctuous flavor of the fish. It must be fresh and handled appropriately.

Each chef has their own personal taste, some find the 血合い’s to be too strong, cutting it off to leave only the white fish. We believe the flavor is dull when the red portion is cut away.

Our chefs are trained to trim Hamachi, creating masterfully trimmed pieces with the perfect ratio of 血合い to white and an ideal blend of ingredients, including Shiso or Obba.

Umami of our Hamachi sashimi is rich without an overwhelming greasy texture. When cut properly the overall enjoyment is elevated significantly.

When Hamachi is frozen, the fish is ruined.

Hamachi’s blood can easily spoil and spread to the entire fish, giving a fishy or rotten flavor. Low-quality, frozen hamachi is often solely the red portion because it is more convenient for long term frozen storage, but that doesn’t mean it should be.

We only provide fresh Hamachi sashimi with a specific proportion of 血合い portion to white. We take pride in offering a fish that has the richest flavor but also visual beauty.

Eating is as much an activity for the eyes as it is for the tongue.

High Quality Hamachi

With any and all fish, fresh should always be the emphasis.

Fresh Hamachi looks and feels soft to the touch with a beautifully exaggerated red, pink, and white surface. The visual is stunning.

Poor quality or frozen Hamachi comes from smaller fish, which do not meet industry regulations. The oil content is low, and the essence is all but lost due to long-term freezing.

Once thawed, the meat will be firm to the touch, loosen, quickly turn gray, and the blood joints spoil. Avoid frozen hamachi. It cannot be served raw, and it does not have any of the qualities hamachi is known for.

Our fresh hamachi sashimi is cut from the entire fish by our in-house chef. We only use large hamachi with a high fat ratio. Our turn over rate is quick to ensure you only receive the freshest pieces.

We follow strict guidelines, maintaining the red portion of the 血合い position, so it is never too small and the flavor is never overpowering.

On Flavor: Hamachi vs. Tuna

Hamachi, or yellowtail, and tuna, or yellowfin or maguro, are two very different types of fish. Tuna has a considerably stronger flavor profile, while Hamachi is known to be cleaner with fruity undertones.

Tuna’s umami is long-lasting and stays with the eater, whereas hamachi has a sharp and poignant flavor.

Online sources often cite Hamachi Sashimi as having a chewy or crispy texture, but that is due to the consumption of low quality portions.

Ideal hamachi allows enough time for fat to enter the muscle tissue. When that occurs, the fish becomes incredibly soft and melts in the mouth. This creates a taste that can and should be described as delicate and soft.

Tuna and hamachi are both excellent fish with distinct characteristics and flavors. The fish you choose should depend on what you’re searching for in your next gastronomic adventure.

If you’re tasting them side by side, it is best to try the subtle flavors of hamachi before tuna. Otherwise the tuna’s flavor will overpower the more discreet hamachi.
