Origin of Fresh Hotate

Found in the cold, deep waters of the North Japan Sea, Fresh Hokkaido Scallops are grown naturally in pollution free waters. They have an extremely sweet flavor, making them the most delicious and sought after in the world.

They have the highest yield and quality, and there is nothing comparable on the market from anywhere else in the world.

Fish can have a subjective smell and taste.

It is favorable to some and displeasing to others. We highly suggest trying Hokkaido Hotate because it lacks the fishy smell. There are no additives and allows the sweetness to shine through.

Thickness and Size of Fresh Hotate Sashimi

Size does not equate quality.

Large Hotate and small Hotate are not ideal. Large sized hotate will have a rough texture, making them less pleasant to enjoy. Small hotate have not had long enough to develop their signature sweet and umami flavors yet.

After years of testing for flavor, texture, and overall quality, we found M size, what other merchants deem "big" or “jumbo”, produces the best flavor for sashimi.

M size Hotate has the tenderest texture with the sweetest flavor palette. Our expert chefs, slice the Hotate in accordance with suitable sashimi standards. Each grain is cut into two or three slices, depending on the size and shape.

This size of Hokkaido Hotate Sashimi is not only delicious and delicate, it fits nicely within the mouth to truly enjoy the complexity of the flavors. Without being too thin or too thick, it melts slowly on the tongue at a rate measured for pure enjoyment.

Hotate: Quality v. General Recognition

There is an assumption that Hotate look a certain way, and this is because what most people see are white and smooth, which comes from being soaked in preservatives and chemical whitening agents.

Our genuine, high quality Japanese Hotate may not look the way you expect because they have never been frozen and have only been preserved in natural seawater so they can keep their natural appearance and flavor.

Contrary to popular recognition, authentic and natural Hokkaido Hotate have a beige coloring. They come from the adductor muscles from two shellfish, known for thinner and more obvious fibers. The flesh is thin and not exaggeratedly swollen or round.

Dry Packed vs. Wet Packed

These terms indicate how the Hotate (Japanese Scallop) have been handled once removed from their natural habitat.

Dry packed refers to Hotate that are closest to how they are found in nature. They have not undergone any chemical treatment or preservation technique.

Dry packed means they are usually fresh and cannot be stored for very long. Because the shelf life is shorter and the quality is higher, the price is the more expensive option.

Wet packed indicates Hotate soaked in sodium trisodium phosphate, acting as a preservative and bleach to whiten the color and swell the pieces to add weight. They ooze a great deal of water during cooking and often have a soaked taste.

Hotate: Sashimi Grade?

Japan has a fishery association certification in different suspension areas to prove origin and conduct inspections and testing. If a piece passes inspection, it is given "Sashimi Grade" Certification.

The intention is good, but consumers often see “Sashimi Grade” Hotate and assume the quality is high.

However, the certification means nothing without a professional handling the product after certification. Many are frozen in order to be kept longer and maximize profit.

Low quality Hotate will experience shrinkage and have a snowy or lack taste. Freezing Hotate leads to an absence of their signature sweet flavor.

Every 150G of Fresh Hokkaido Hotate Sashimi will contain 12-15 pieces (4-5 grains) of Standard Sashimi Cut. Please note that the number of cuts may vary depending on the actual situation. But the net weight is guaranteed to exceed.
