Fresh Negitoro—Minced Bluefin Tuna Sashimi

Our Negitoro is hand crafted by our chef from the highest quality of Japanese Bluefin Tuna, or Hon Maguro.

It is a high-end version of minced Tuna, which cannot be found easily on the market. It is known for its rich and authentic flavor because it is made fresh with no chemicals or additives.

Cruel Truth Behind Negitoro

Negitoro is traditionally made of nothing but tuna.

However, the unfortunate truth is that a great deal of “Negitoro” on the market includes additives and artificial chemicals.

Other purveyors may find this acceptable, but we do not. These additives do nothing but allow Negitoro to sit on a shelf or in the freezer longer than it should. 

Frozen Negitoro is often filled with Maguro, or Yellowfin Tuna, or Bigeye Tuna, or Longfin Tuna instead of the authentic Maguro, or Bluefin Tuna.

In Japanese “negi” means minced and “toro” means Bluefin Tuna. Only Bluefin Tuna can be called Toro.

When merchants use Maguro in Negitoro, they add artificial chemicals to lighten the color of the fish and oils, giving the product an appearance of high quality Negitoro. Instead of labeling the product as “much like Toro,” it is sold as “Toro,” which it is not.

The ingredient list on the label will only read as including carbohydrates, protein, saturated fat, sodium, etc. It can be difficult to tell the difference between authentic Negitoro and its imposter.

Though we can’t impose industry wide regulations on this practice, we can change the industry by educating our customers and offering quality, authentic, Negitoro.

We can guarantee our in-house chef scrapes and chops each fresh portion of Bluefin Tuna by hand with a knife. The only thing that goes into our Negitoro is passion, precision, and Toro.

There are absolutely no additives or chemicals.

The Difference in Handcrafted Negitoro

We pride our Negitoro on its quality because we only use the very best Bluefin Tuna, also known as Hon Maguro. The flavor is impacted by the three sections of the fish, which are called Akami, Otoro, and Chutoro.

The texture is very rich. There are three flavors that will dance across the palette because the combination of Akami, Otoro, and Chutoro bring unique qualities that compliment one another.

Our Negitoro is rich in oil and in umami. These flavors can truly shine through because it is hand crafted by our professional chef rather than processed and broken down by a machine.

Being processed by hand allows the fish to retain its different pulp sizes, which creates a unique and entirely special taste.
