Our fresh Tai, also known as Madai or Japanese Sea Bream, is the perfect symbolic and unique choice for Sashimi with an elegant and delightful umami.

By chewing slowly, Tai gradually releases its natural sweetness across the taste buds. This authentic sweetness is both a rare and unique characteristic.

Tai’s umami is only present when it’s enjoyed fresh.

Essence of Tai Sashimi Is in the Skin

In our opinion, fish skin is both the essence of Madai (Tai) Sashimi and an important distinguishing factor of its quality.

Tai Sashimi without the skin does not feature layering, and an integral part of the experience is lost, creating a less enjoyable dining experience.

Tai is a special fish, and it cannot be refrigerated for long. Low quality Tai is often frozen, and to freeze it, the fish skin is removed.

Removing the skin is a convenient way for merchants to store it. When merchants want to keep Tai in stock without risk of spoiling, they freeze the fish, which destroys the flavor.

To truly enjoy the full flavor of Tai and appreciate the depth of its umami, it is important to avoid frozen Tai that without the skin.

Uplifting the Delicious Flavor of Tai Sashimi

Tasting the true delicious flavors of Tai Sashimi is all about investing in quality. The fish must feature the skin intact; however, raw Tai skin is impossible to chew.

In order to eat the skin, it must be treated in a specific way to soften the skin into a more elastic texture.

This process helps develop the taste, which means there is a sense of layering in quality Tai Sashimi.

Whether Tai skin is treated or not is a direct reflection of the quality of the fish as well as the quality of the Sashimi purveyor.

Professional Sashimi stores will often offer treated Tai, whereas amateur online sashimi warehouse are not able to offer untreated skin.

Tai Sashimi skin treatment method is called: 皮霜造り. It can also be divided into two common techniques:

1.     「焼霜作り」 Yakishimo-zukuri

This is our default option. If it is not what you would like, please let us know in the order notes if you would prefer another option.

This method includes gently burning the Tai's fish skin with a musket, which forces the sebum aroma and creates a faint smoky scent.

This method greatly enhances the flavor as well as accentuates the meat’s plumpness. After the Aburi process, the fish skin crisps up.

When the two different textures of fish and skin collide, the taste is transformed into something quite complex and fascinating.

2.     「湯霜作り」Yushimo-zukuri

This method features quick switching of the fish between hot and cold water. The rapid temperature changes to the fish skin transforms something that would be hard to chew into something malleable.

This process changes the skin color from opaque to crystal clear. Those who prefer a tender taste should choose this option.

These two processing methods are difficult to execute well because they need to be done quickly and precisely or the fish will cook rather than be treated.

Purchasing through us ensures the Tai skin is properly processed by our professional and skilled chef.

The Problem with Tai Filet Block for Sashimi

Stores will offer a large Tai Filet Block at a low price. This deal often seems too good to be true. It is.

These products feature portions that include thick fish bones. They are difficult to cut once processed into sashimi.

Keeping it intact is very difficult, and a great deal of meat will be wasted during the portioning process.

An example is if the Tai Filet Block starts out at 500G, the usable portion is maybe 300G.

If this is an option you would like, you should have the merchant slice it and charge you for the portion you will be taking home to ensure you’re not paying for more than you can use.
